Day 4, Thursday.

These days I feel like I am writing a journal .. everyday I am excited to try something new and to share the experiences with everyone. My mornings are spent thinking about the muffin recipe that I can try today, my office breaks spent on browsing through my saved recipes or new recipes, and my evening, executing my day’s research. 🙂

This banana oats muffins recipe was lying in my saved section from a long time and I really wanted to try this. So , what could be a better time than this… They are perfect for teatime, small snack break and even for breakfast.. I really like them for my breakfast with a strong cup of coffee, and also took them for my evening snack for my 2 hours tiresome bus journey.

Recipe for banana oats muffins –

 

Ingredients-

  • ½ cup whole wheat flour
  • ½ cup instant oats
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 2 medium sized banana (1/2 cup mashed banana)
  • ¼ cup oil
  • ½ tsp vanilla essence
  • ¼ cup brown sugar
  • 1 tbsp chia seeds (you can add any nuts also)
  • 1 tsp of flax seeds and musk melon seeds for sprinkling on the muffin’s top.
  • Pinch of salt.

Method –

  1. Preheat the oven at 200 degree Celsius.
  2. Sieve the whole wheat flour salt, baking soda, baking powder together in a bowl. Add the oats and chia seeds in the bowl.
  3. In another bowl, add the mashed banana , brown sugar and vanilla essence. Stir well . Add oil and stir till all incorporated together.
  4. Add the flour mixture to the wet mixture and mix gently. Use cut and fold method to mix . Do not over mix the batter.
  5. With the use of spoons, fill the muffins tray till the top. Put some flax seeds and musk melon seeds as garnishing over the muffins top.
  6. Bake them at the high temperature (200 degree C) for about 5 minutes, then reduce the temperature to 180 and bake for 12-15 minutes.Do note I use small muffin tray , if your muffin tray is medium/regular sized, bake them for around 18-20 minutes.
  7. Insert a toothpick in a muffin, if it comes out clean , then the muffins are done.
  8. Enjoy them with cold milk or hot coffee 🙂

chocochip oats muffins, oats, eggless, Chocolate chips oats muffinsAs they say, chocolate makes everything better, I feel these Chocolate chips muffins are best for everyone,  those who are die hard chocolate fan (like me  :P )  or who like chocolate but in small amount(like my mum ). These muffins have the perfect balance of chocolate and vanilla flavored dough.

As I mentioned in my previous post, I will be making a different muffin this week for her tea time. For Monday , I made these tutti-fruity muffins, for Tuesday , I made her a batch of spiced apple muffins . So, for Wednesday , I decided to make these chocolate chips muffins for her tea time. They are perfect to have with a cup of tea/coffee and will make your worries and tiredness vanish in seconds. They are super soft with the perfect dome top and on the top of it, the added oats make them healthy too.. 🙂

Recipe for Chocolate chips muffins –

Ingredients :

  • ½  cup of all purpose flour(maida)
  • ¼ cup oats
  • ¼  cup of granulated sugar
  • ¼  cup of Oil

  • ¼  tsp of baking soda
  • ½ tsp of baking powder
  • ¼ cup of Chocolate chips
  • A pinch of salt
  • A tsp of flour (to dust the tutii-fruity)
  • A tbsp of milk (if required)

 Method :

  1. Preheat the oven at 200 degree Celsius.
  2. Sieve all purpose flour (maida) and salt together in a bowl. Add the oats in the bowl.
  3. In another bowl, add the sugar , oil and vanilla essence and stir it well until the sugar dissolves.
  4. Add the baking powder and baking soda in the yogurt and let it sit for 3-4 minutes.( sieve the baking powder and baking soda in the yogurt, it prevents their lump formation).
  5. Add this curd mixture to the oil mixture bowl and gently stir.
  6. Dust the chocolate chips with the flour.
  7. Add the flour mixture to the wet ingredients and add the chocolate chips. Stir the mixture gently until everything is combined.
  8. Now fill the muffins tray till the top. I love the dome type structure of the muffins. If you also want them , then fill your muffins cups till the top , and bake them at the high temperature (200 degree C) for about 4-5 minutes, then reduce the temperature to 180 and bake for 10 minutes.
  9. Insert a toothpick in a muffin, if it comes out clean , then the muffins are done.
  10. Serve hot with hot tea or cold coffee. 🙂

Tutty-fruity tea time muffins

I belong to Ranikhet, a very beautiful hill station in Uttarakhand. Uttarakhand and its people are famous for many things, its nature, its beauty , kind and friendly people and their undying love for tea. Pahadi’s (as we are known) can never say no to a cup of tea. My mom is one such true pahadi, she loves her tea, strong with little milk , as she likes to have. My mom always enjoys her tea time , whether its 20 degree C or 40 degree C outside.

Today, being my holiday , I decided to surprise mum with a tea time snack for her. I whipped up some tutty-fruity muffins  to accompany her 4pm tea. Well, the best thing is she loved them and ordered me to make some of these for her everyday tea time snacks as she says, its always best when its homemade.. 🙂

Do try these egg-less tutti-fruity muffins, you will love them.

Recipe –

Spiced Apple Muffin

In India, monsoon season is welcomed with something fried and something chatpata accompanied with a hot cup of tea (or like in my case coffee :P) , and .. It’s like a natural instinct for me..whenever the rain starts, my mind starts thinking of having those crispy onion and potato pakodas with chatpati pudhina chutney…Ohh!! my love for the green chutney..!!!

Oh well, before I get engrossed in my thoughts of having pudhina chutney and end up making one.. Let me tell you what this post is all about..

Well this post is not about pakodas or green pudhina chutney or a cup of coffee, this is about my want to have something different also.. (Though I would never give the chance of having those fried crispy finger food in rainy season).I wanted to bake something that can also go great with the season.

Spiced apple muffins are the perfect choice for the season. It has a little spiciness with clove and dalchini(cinnamon) and the freshness of apple, and on the top of it, the whole wheat flour makes it healthy too 🙂 .It’s one of those food with that I can imagine myself sitting on the porch with a cup of coffee and enjoying the rain with this muffin.

Let’s have a little change in the monsoon menu this rainy season with this spiced apple muffin  🙂

Recipe for Spiced Apple Muffin-

  • Ingredients :
  • ½ tin or 200 gm of condensed milk
  • 1 tbsp of powdered sugar
  • 1 cup of whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon (dalchini)
  • 2 crushed cloves
  • ½ cup of oil
  • ½ tsp of vanilla essence
  • 1 small apple – chopped in small pieces.

Method :

  1. Pre-heat the oven to 350 degree F or 180 degree C for at least 10 minutes.
  2. In a bowl, sift flour with baking powder, baking soda and cinnamon powder.
  3. Beat condensed milk with sugar. Add vanilla essence and oil and beat again.
  4. Add crushed cloves.
  5. Add the dry ingredients (the flour mixture) and gently fold the mixture with a spatula.
  6. Sprinkle a tbsp of flour on the chopped apple and fold it into the batter.
  7. Grease the muffin tray or you can also use paper cups with the muffin tray.
  8. Fill each cup with about ¾ only.
  9. Bake them for 20-25 minutes. Check a muffin by inserting a toothpick in the center . If toothpick comes out clean then they are ready.

Eggless Chocolate Cake with whole wheat flour

It was my parent’s 29 marriage anniversary some months back and I had planned to make a cake to celebrate the occasion. So, this cake is very special to me ,as first it was made as one of my gifts for Mom and Dad and secondly ,it was my first cake with icing.

So, the preparation began on full swing and for the complete week I went through various blogs, YouTube videos to get ideas for icing along with chocolate decorations. After completing my “research”  😛 , I was full on ready to make the cake.

So, after coming from office on Friday, I got all my ingredients for the cake and after the quick mixing set it in the oven for baking. Now came the hard part, the icing. As it was my first attempt I decided on thick chocolate ganache icing along with some chocolate decorations. For chocolate decorations, I made squares of white and dark chocolate designs and cut out some hearts with dark chocolate and wrote 29 on them. As I made all this in hurry on Saturday morning(The D-Day) I couldn’t take the pictures of the making of chocolate decorations, but I will try put the procedure of the same very soon.

Recipe for the Egg-less Chocolate Cake –

Ingredients for Chocolate cake :

  • 1 cup of whole wheat flour.
  • 2 tbsp of cocco powder.
  • 1 tsp of baking powder.
  • ½ tsp of baking soda.
  • ¾ cup of condensed milk.
  • ½ cup of unsalted butter.
  • 1 tsp of vanilla essence.
  • ½ cup of water.

Method –

  1. Pre-heat the oven to 350 degree F or 180 degree C for at least 10 minutes.
  2. Grease a round cake pan well with butter or oil.
  3. Take dry ingredients (Whole wheat flour, cocco powder, baking soda, baking powder) in a bowl.Mix them well till they get incorporated.
  4. In another bowl take melted butter and /add condensed milk. Beat it well.
  5. Add water and vanilla essence  Whisk it well.
  6. Add dry flour mixture to wet mixture.
  7. Whisk well and make sure there are no lumps.
  8. Pour the batter into prepared cake pan.
  9. Bake into pre-heated oven for 30-35 minutes. Check the cake by inserting a toothpick in the center . If toothpick comes out clean then cake is ready.
  10. Let the cake cool on the rack. After the cake is cooled , keep it in the fridge overnight. Cake should be completely cooled before icing.

I completed the cake with chocolate ganache icing and some chocolate decorations..

Eggless Upside Down Pineapple Cake

Last week was just another one of the many monotonous and tedious weeks that I have been experiencing from the last 3 months.. From the last 3 months, I have been working whole week.. be it a weekday or weekend.. As for most of the people, I love weekends, and not getting my dose of these two free days to forget the tensions of the job, to remove all the fatigue of the week, meet my friends was driving me insane..

One thing that got affected the most during this time is my new blog.. Cooking is one thing I can’t leave , I did make new things every weekends these last months, may be a new drink.. or just helped out mum in the kitchen.. It helped me relieve the stress and get started for the new week.. But I was not able to give time to write the recipes, to share out my experiences..which I am not proud of.. so, today when I got a free day, I promised myself that I will try out a new recipe and post it on the blog. Also, no more neglecting my blog , no matter how busy I am I will try to find time for blogging too.. 🙂

Well , to celebrate my comeback and the promises I made the eggless pineapple upside down cake, hope you all will like it..

Recipe for Eggless Pineapple Upside Down Cake –

  • Flour/maida – 1 ¼ cups
  • Baking powder – 1 tsp
  • Baking soda – ½ tsp
  • Butter – ½ cup
  • Milkmaid – ½ tin
  • Fresh pineapple juice – ½ to ¾ cup,as required
  • Fresh pineapple slices – 5-7
  • Raisins – to fill between the circles in the pineapple slices.
  • Sugar – 3-4 tbsps,for making the caramel

Method:

  1. Pre-heat the oven to 350 degree F or 180 degree C for at least 10 minutes.
  2. Grease a round cake pan well with butter or oil.
  3. Add sugar in a pan and stir it continuously on high flame till sugar starts melting.Once , the sugar starts melting reduce the flame and keep stirring till it turns brown. Pour and spread this caramel sauce on the greased cake pan.
  4. Arrange the pineapple slices as shown in the picture or any way you like. I added some raisins in the circles in the slices.IMG_5354
  5. Take dry ingredients (maida, baking soda, baking powder) in a bowl. Mix them well till they get incorporated.
  6. In another bowl take butter at room temperature and beat it, add condensed milk. Beat them well together.
  7. Add pineapple juice. Whisk it well.
  8. Add dry flour mixture to wet mixture.
  9. Mix well and make sure there are no lumps.
  10. Pour the batter into prepared cake pan.IMG_5360
  11. Bake into pre-heated oven for 30-35 minutes. Check the cake by inserting a toothpick in the centre. If toothpick comes out clean then cake is ready.

  • I have used fresh pineapple juice instead of milk and pineapple essence.

Vanilla Checkerboard cake – Republic Day Special :)

26 January 2015 , India celebrates its 66th Republic Day..Every Indian celebrates the day with great enthusiasm and patriotism .Being brought up in a family of military officers (my grandpa and uncle both served for Army),this day holds a lot of excitement for us..Every year, we all wake up early and have breakfast watching the Republic Day parade.. Till 12 , all of us always remain glued to the TV , feeling a sense of pride with every marching platoon, beautiful jhankis and dances that are performed at Vijay Chowk, New Delhi. 

This year was no different..Around 11 mum served some fried chips with coffee. There was something special about those fried chips that made me want to make this cake.. Guess what?? Well , they were tricolor chips ..

After having those chips , I decided on making a tricolor checkerboard cake.. with saffron(orange), white(plain)  and green vanilla cakes to celebrate our Republic Day.. 🙂

For cake:

Ingredients: 

  • 2 cups of maida
  • 1 cup of full cream milk
  • 1 cup of sugar
  • 1/2 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1 tsp of vanilla essence
  • 3 tbsp of oil
  • 1 tbsp Lemon juice
  • Food color (orange and green color)

Method:

  1. Sieve maida, baking powder, baking soda in a bowl.
  2. Add the sugar in the milk and mix well.
  3. Add the dry mixture in the milk mixture, combine everything to make sure there are no lumps of any dry ingredient.
  4. Add vanilla extract and oil and again mix well.
  5. Add 1 tbsp lemon juice and mix everything well.
  6. Divide the batter into three parts. Add green food color to one part and orange color to the second.(No color is required for the third)
  7. Grease the microwave safe dish with oil and pour anyone of the batter in it. Keep it in microwave at 720W (80% power setting) for about 4 minutes.
  8. Cool the first cake and put the second one in the microwave. 
  9. After making the three cakes, reassemble the cake.

For the chocolate ganache:

Ingredients:

  • 1 cup of Dark chocolate
  • 1 cup of Heavy cream

Method:

  1. Pour the cream into a small pan and place it over medium-low heat for a few minutes. Keep an eye on the cream , it’s not necessary to boil or simmer it. It just needs to get hot. The cream is ready when you can place a finger in the cream and keep it there for 3 to 4 seconds. 
  2. Chop the chocolate in small pieces and add the chocolate in the cream. Stir the chocolate through the cream and let it sit for a few minutes 
  3. Mix the ganache and keep stirring untill it comes together.
  4. Cool the ganache before using.

Assembly of cake:

  1. Cut each cake into three circular parts. I used a cookie cutter for the centre part (smallest one) and a small plate for the medium one.
  2. After getting all the three parts for each cake ,start with the assembling. Place the outer circular part(largest part) green color cake first and layer with chocolate ganache in the insides of the cake. Place the second piece of the white color cake and again layer the inside of the white cake with chocolate ganache. Now, place the third and smallest piece of orange color cake in the centre. Layer the whole top of the cake with chocolate ganache.
  3. Swap the cut outs between the layers.Pile the cake one on top of the other, alternating the colors.
  4. Make sure to add frosting between the layer ..
  5. Layer the cake with chocolate ganache in the end.
  6. Slice the cake and serve 🙂
